Shrikhand| Sweetened Yogurt Mousse

Shrikhand is essentially sweeten yogurt with added flavors like cardamom, saffron, pistachios. The one with Mango is popularly known as amarkhand-- aam is mango!
I made this on occasion of Birth of Lord Krishna. Its a favorite among kids. Eat it as is or with Fried Puri..yummmmm
Extremely easy peasy dessert. Make in for large gatherings and it freezes well! 






Ingredients 
1 cup yogurt
1/4 cup sugar
Few pieces of cardamon(elaichi)
Saffron few strands
1 tbsp milk powder (optional) 

Procedure
Using a muslin cloth or cheese cloth drain the water completely.  Tie it and keep refrigerated this way for at least 4-5 hrs. 
I have used store brought Mountain high yogurt. Greek yogurt also works best due to low water content.

Don't keep it outside as you don't want it to turn sour.

This step is crucial!!!
I have kept a plate below to raise it and let the water drain

Look at the thickness of yogurt..


Add rest of the ingredients 


Mix with light hands until nice smooth. 
Add a spoon of milk powder ..but its absolutely optional. But the Milk powder helps its to retain nice texture.

Keep it refrigerated for couple of hrs before serving for best flavors to evolve in this. The saffron gives it mild yellow color to it.
