Masala Puri

Puri's are basically deep fried Indian bread made of whole wheat flour. They are very easy to make yet, its a tricky to get it perfectly puffed, soft yet the slight crispness and not very oily. Dp check out the entire recipe for all those tips.

This with twist to the regular puri, since it has some spices. You can always skip the species. But I like to add them, so that we can enjoy it with a cup of tea as well.

Ingredients
3 cups Wheat Flour
1/2 tsp Turmeric powder
1 tsp Chili Powder
1/2 tsp Cumin powder
1 tsp Salt
1 cup Water
2 tbsp oil +
Oil to fry

Procedure
Mix all the dry ingredients well and add about 2 tbsp of oil and mix well. 
Add water slowly to form semi  hard dough. 




Dough for Puri should not be very soft like chapati else, it will soak lot of oil while frying. 




Let the dough rest covered for about 20 mins.Now knead again for a min. This is how it looks.
Resting any dough is very essential.

Now make small balls and roll them into circle into medium thickness. Do no roll them too thin else they turn hard/ crispy. We want a nice puff.

Apply oil to the surface and the balls , we wont be using the dry flour to roll, else there will be too much of flour in oil and it will turn messy. Puri should always be rolled without flour





Heat oil. Once the oil is hot enough add the puris one by one. Let it cook on one side. Turn it and lightly pressed it with your spoon, they will puff well. Let it cook on other side.Once done remove them on tissue paper to drain excess oil.



Serve you masala puri with curry, or tea which my hubby likes or with lovely rice kheer which I like :)
