Bread Upma
Childhood is always fun and filled with memories. Growing , weekends were special, yes, fun.. but also because that was the time when Dad would take over the breakfast scene.. he did have some speciality and this Bread Upma is one of them.. I always think always him when I make bread upma. Its fun, easy and quick breakfast idea.. with age now I do try to portion control the carb :) but that does not mean you can't enjoy these dishes.
Use protein breads or whole wheat loaf to make them..If you have never tried this.. do give a try and let me know if you like it :)
Ingredients
Veggies of your choice ( Bell pepper, Cabbage, tomato )
oil
Cumin seeds
Seasoning ( salt, chilli, turmeric, coriander powder)
Green chilli
Cilantro for garnishing
Bread Loaf ( your choice)
Procedure:
Take a oil in a deep skillet and let it come to a hot temperature. Add in cumin, Mustard seeds, green chilli and let it sputter.
Add the Veggies of your choice one by one and keep mixing the the veggies.
Add the spice mix and cook until the veggies are tender. You may keep the lid ON , and let it cook on steam for few mins.
In the meanwhile, make super small pieces for the bread loaf. I have used in homemade whole wheat bread loaf here.
Add it to the mixtures of veggies and mix well.
My dad used to always add and 2 tbsp of Milk to this and mix well.
This gives it nice softy and moist texture.
Skip Milk if you want to avoid, Make sure add few table spoons of water to this instead.
