No Flour | Creamy Spinach Sauce Pasta
Pasta an Italian dish has become a household dish for everyone and every kids favorite.
The sauce has white flour in it as base. However we as parents always try to avoid white flour as much as possible. Even as Adults why not try and avoid it..specially when you can enrich it with some added protein...Look out for my No white flour sauce loaded with extra iron and protein...Try out and let me know!!!

Ingredients
2 cups raw pasta
For sauce
3 Tbsp Almond flour
1.5 cup milk
1/4 cup Parmesan cheese (optional)
2 cups Spinach
Ice cubes
Seasoning
Mixed Italian herbs
Olive oil
Salt
Pepper/chilli flakes
Procedure
Boil and strain pasta as per the instructions on the pack. Make sure you don't over cook. Mildly soft
Blanch Spinach and rinse it in cold water. Running boiled spinach in cold water helps retain the nice green color
I am using Organic Almond flour here from Costco. But you could essentially use it for any brand or 15-20 amond soak in hot water remove the skin and use then.
In a blender mix in the blanched spinach, almond flour, milk and Couple of ice cubes!
Yea..ice cube...you will see the beautiful green color it gives
In a pan add little olive oil, the puree.
Once it comes to boil , simmer and reduce the heat and add the Seasoning
Add Boiled pasta to it and bring it to nice boil. You will notice the sauce turn nice and creamy
Add Parmesan cheese now..this is absolutely optional! Its equally cheesy without it as well
Serve hot with your choice of bread or sautéed broccoli on sides like we love it! My kids M n R love it!
