Pav Bhaji
Pav Bhaji needs no Introduction. It is famous street food specially in Mumbai, India mainly made from Onions, tomatoes , Bell pepper, spices and tons of butter. PAV is the Buns that goes along with it and Bhaji translates to veggies.
We all are in love it. But as you know by now , we have dietary restriction with Onion and garlic, this recipe is minus this hence super quick as well. No need to saute time consuming onions ;)
My husband can practically eat it in all the meals and now both my kids have taken after him. 2 weeks and there starts a demand as if its been ages that they ate it. This is my take on Pav- Bhaji. Every house hold might have different variation. But I simply love this mainly because we can sneak in lot of veggies in this. It's almost one pot and quick fix for even a weeknight.

Ingredients
Green Peas
1/2 head Cauliflower
1 Bell pepper
1/4 Cabbage
2-3 Potatoes
3 Tomatoes
4 tbsp Pav Bhaji Masala ( I use MDH or Captain Cook)
Kashmiri chili
3 tbsp Tomato puree
Oil
Procedure
Wash and cut the veggies except tomatoes and pressure cook it for about 3 whistles with little Salt.
In case of using instant pot I use High pressure all veggies at Manual 15 mins. Do not put too much water just a little to steam veggies. We want to texture to be semi solid and not too watery. Extra water can be added later to adjust the consistency.
Once done, open the cooker and mash the veggies completely with a hand blender or better use a masher.
Add in finely chopped bell pepper and add in tomatoes and all the seasoning , add in little water as required and Add the tomato puree. In case you don't have puree you may add little extra tomatoes.
Let the mixture boil well to get such nice gravy. Let it cook till tomatoes start almost melting.
Now add in till mixture to the boiled veggies and mix well and bring it to boil.
