Palak Paneer| Kale Palak

Spinach is one of the most nutrient food green. As Kids it was popular as . Palak is hindi name for spinach. It is a pureed form of spinach, very easy to make, eat and digest. Loved by kids and adults equally. This is my take  of creating this yummy gravy. Panner is the cottage cheese added to this spinach gravy.  Alternatively you make add cubed potatoes as well. Just fry them before adding.

For the longest time I used to use just Spinach in this curry but ever since I have started growing my own Kale ( which by the way is in abundance) I thought lets try to use it in this curry. And trust me I have been adding 50 % Kale and 50 % Spinach and it has given me 100% consistent super delicious flavor.

Kale Spinach Paneer



Ingredients
1 Bunch Spinach
Kale ( 50 %)
1 Tomato chopped
5-6 Cashew nut ( check alternatives in the post below)
Water to adjust the consistency
1 tsp cumin-coriander powder
1 tsp red chili powder
1/2 tsp garam masala
Oil
Fresh cream / Heavy cream ( optional) 

Procedure


Look at that fresh Greens right from my backyard!! Nothings beats the flavors of fresh grown greens. Spinach and Kale. All washed and cleaned. Ready for blanching



Take a pot of boiling water and blanch the spinach + Kale in it with a pinch of salt till it's tender. 

Alternatively you can also microwave it for about 3 mins. 

Kale gave some nice rustic flavor to it.  If you have no Kale , then make it with just use Spinach.

Want to avoid Cashew??? No worries , i have tried making it Almonds as well , They turn out equally good. 
Nut Allergy??? Don't worry replace with handful of Pumpkin seeds or just a slice of bread if that works for you :)

Saag Paneer is another popular dish with is basically mixing the Mustard Leaves with Spinach. I personally don't love the taste of Mustard leaves that much. But the flavor that Kale gave was amazing!.. You should try it out to believe me.


Once cooled, blend it to form a smooth puree. 

PRO TIP>> Put some ice cubes while blending..you will get that nice green color.

Alternatively to make the process quick I usually dump all the ingredients except the spices and Paneer in a pot and Microwave it for 4 mins.

Take a wok, add little oil, once it hot add the puree and saute it for few min , till tender. Add the dry ingredients ( Spice mix) and give it a good stir. 


Mix it well and let it cook on medium flame for abut 5-10 mins. 

Add cream at this point (its totally option but will definitely elevate the taste). Squeeze little lemon for that additional touch :)

Then add cubed panner- cottage cheese to it and serve it warm with Roti or naan.
