Matar Ki Kachori| Peas Kachori Airfried
Kachori's are basically like stuffed dumpling deep fried. This is my version of Airfried Matar Kachori. There are lot of varieties in it with the stuffing that goes into it and the way it is made differs on the different regions in India.
This one is more like a wet variety which needs to be consumed within A-day or 2. Best served warm and today I am using green peas which are very easily available either frozen or fresh during the season. In certain states like Rajasthan its also of a part of special breakfast.
This is my take on it. Stuffing needs to be little moist with sweet, spice and tangy in equal proportion
Ingredients
For Stuffing
Peas
Sugar( I used Jaggery)
Salt
Chilli powder
Coriander powder
Cumin powder
Dry Mango powder
Tsp of lemon juice
Dough
2.5 cups Whole wheat flour
3 tbsp oil
1 cup Water
Procedure
Add oil to wheat flour mix it . (DO NOT SKIP or add less oil in the flour ) This is what will help to make it flaky
Once you add oil mix it really well, so that oil is coated well with the flour.
You can also use White flour/ Maida.
Mix well and slowly add water to make semi stiff dough. Keep it aside to rest.
Now prepare for the stuffing>
I have used frozen peas , you can also use fresh ones, but steam them a little in microwave for about 2 mins. Coarsely grind it add little cumin to it. Do not add water, The moisture is enough for grinding.
Now in the skillet add little oil, carrom seeds ( ajwin) . Add the crushes peas.
Saute for few secs.
Add the rest of the spice mix ( sugar, salt, chilli powder, coriander powder, lemon , dry mango powder) mix it well and saute for another 2-3 mins,
The mixture is soft and not very dry.
Now make small balls from the dough and flatten it with hand. Place a spoonful of mixture in the center and seal it. and flatten it between the palms and use fingers.
DO NOT try to press and roll it with the Rolling pin. They will not puff up well then.
AIR FRY them at 350 F for 15 mins. Turn it after 8 mins and brush little oil again.
Do not have Airfrier?
If you want to Deep fry then make sure to fry then at low to medium flame, only then it will be crispy and smooth coating outside.
Eat it as is, or put in some yogurt, and sweet chutney.
