Rava Dhokla

Dhokla are the one of most popular dish from state of Gujrat which is popular all over. Mostly people who are non Gujrati would refer the the yellow one as Dhokla but its  called Khaman Dhokla and then there are other varieties of them. This one is the instant Rava Dhokla ! 

Absolutely fluffy,  light on tummy and everyone's favorite...
Quick snack that can be made in jiffy. No guest has been disappointed when this is on Menu. 
 

Ingredients 
 1 cup Rava
2 tbsp Yogurt 
 Water to adjust consistency
Chilli ginger paste ( optional)
2 tsp Oil
Salt to taste
1/2 tsp Sugar 

Procedure 
Take rava add to it little yogurt , you could add some spice like ginger chilli paste to it. 


Some times I also add lot of chopped cilantro to this . Add salt, sugar about 1 tbsp, and add enough water to it. Mix well and make sure its lump free. The batter should be like paste consistency. 


Not to liquid but at the same time not too much thick. 


Rest the batter for 10 mins. This gives better results.  Rava will soak up water in turn little thicker.

Add 1 tbsp oil to it and mix well. 



Tips and Tricks NOT to be missed.

1: Keep your steamer ready and put plated greased in it on flame.
2: Once the water boils then proceed to next step for pouring the batter.
3: every plate of Dhokla will need 1 tsp of ENO 
4 : If you are making multiple plates, then DON'T throw in all the Eno or just one spoon in the whole batter.
5 : take a separate bowl ,add just enough Quantity in it , mix eno and pour it on the plate in steamer.
6: Repeat step 6 for each time.
7 : Dont add Eno into the batter and let it sit on counter for long, else the Dhoklas won't br fluffy.



 

Once Eno is added and mixed, the mixture becomes frothy. Pour it immediately into the hot steaming plate.
   


Open the lid in 10-12 mins and do a knife test. Knife should come out clean.
