Broccoli Almond Soup


Soups are my absolute favorite! I love to have my bowl of soup any time of day any season! It's great way to add lots of veggies feel light and content. This is definitely our family favorite , off-course are the Tomato soup .This is my take on Broccoli Almond soup.

You could use whole almond and steam it with Broccoli and peel the skin of and crush or use the Almond flour instead. Either way it taste great. 


Ingredients:
1 cup Broccoli
8-10 Almonds or 2 tbsp of Almond Flour
2 cups Milk
2 cup water
2 tbsp Wheat flour/ All purpose flour
1 tsp salt
1/2 tsp pepper
Italian Seasoning


Procedure:
Steam / Microwave the Broccoli for about 2 mins till tender.
Then in the mixer add Broccoli, 1 cup milk, Almond flour , wheat / all purpose flour and blend it into a smooth paste.


Add some seasoning and blend it into very smooth paste


Once its a smooth paste , add the remaining of milk and add water to the mixture and Keep it on simmer for at-least 15 mins. Keep stirring occasionally.

TIPS:
Do not Boil the soup on high flame
Do not miss on adding the wheat / all purpose flour 
Both these steps are very important else your soup will start to curdle.
