Thai | Pineapple Fried Rice

I personally love thai food, Probably due to the my inclination for coconut based curry from my coastal origin.  I have finally turned my son M into a thai food lover as well..lol..its kind off big deal for me. Special occasions has been always been my Thai  food outing. Using the taste buds from those outing as my reference I have curated the closest possible match in terms of flavor. This is my take on it. Do try it out and let me know what you feel!!



Ingredients

Veggies of your choice:
Chopped cauliflower
Broccoli
Celery
Bell Pepper
Green Chilli
Zucchini
Baby Corn

Must include
Pineapple
Par Boiled Rice
2 tbl Tomato paste 
1 tbs Soy Sauce
1/4 cup Coconut milk ( optional but trust me this adds so much more flavor)
2 tbs Basil powder or take 8-10 fresh Basil leaves
Chili powder (optional)


Procedure:

You might be seeing tons of ingredients here, But basically just take veggies of your choice!!!
I love to include lot of veggies here as you can see.



Chopped all the veggies  and saute in the pan with little oil. And once slightly tender add the coconut milk and let it cook for another 2 mins



Add the soy sauce, tomato paste and chopped pine apple. Make sure to crush with hand some pineapple while you add.



Then slowly add the rice and mix well. Add extra spice if you like 


Serve it hot with your choice sides !!
