DoodhiChannaDal | Squash curry

Doodhi/ Lauki is basically the squash, I personally feel is a very staple in any Gujrati household. Growing up I coming from very hybrid background , my mom did not use it much in daily cooking apart from putting it in sambhar sometimes. This is my take on this versatile vege ..yes versatile..because I have started using it in so many different ways ... obviously love the traditional recipes ..another fav dish is the popular muthiya.. ( recipe coming up soon!)

Lauki Channa Dal/ Squash Lentil curry
Lauki Channa Dal/ Squash Lentil curry

Yeah...!   Thats my spice box for daily mix :)😊

Ingredients

1 cup  Channa Dal
1/4 cup Moong dal ( optional)
2.5 cups Water
1 chopped tomato
Green chilli
2 cups chopped Lauki/ Doodhi

1tsp turmeric powder
1 tp mustard seeds
cumin Seeds
Coriander powder
Chilli powder
Salt

Procedure

Channa Dal takes while to cook compared to Toor or Moong dal. Soaking it helps but not mandatory.
I prefer to do it in pressure cooking mode.
You can definately use normal pressure cooker for this. I have used my Instant pot for cooking this. Dump and go!!

1: Saute Mode : Add oil, once it is hot, add the mustard seeds, cumin seeds, chillis.
Once it starts to sputter add the tomatoes, lauki/ squash in it.

Add in the remaining spices  and Salt. Add water to adjust the consistency.
Close the lid , put it on High Pressure for 20 mins.
Wait for Natural pressure release ( in case of hurry do quick release) .

Once open give it a good stir. Add chopped cilantro ( optional).I like to boil it for few mins once  I open the lid.
Use The Soup mode .. works best for boiling anything :)

Ahh.. there is someone who could resist until the clicking is done ...lol
