Palak Thepla

Thelpa are a staple in a Gujrati household. Methi( Fenugreek) theplas are the most popular ones...but there are other veggies too which can be used... my MIL would send in lunch box to my then classmate 🙃..yeah...thats how long I know my spouse 😄😄
She would make it of Squash or cabbage.

Today in frame is our favorite Palak thepla..but its a dough I use it for multiple purposes. 
Thepla, parotha just mend the way you roll it or cook it in skillet. 



Ingredients
1 cup Blanched Spinach
3 cups Wheat Flour
Salt to taste
Spice Mix
Water (based on the consistency


Procedure
Wash and Rinse the Spinach. You can blanch it in microwave or just keep it in hot water covered for few mins.
Run thru a cold water stream > Helps to retain the green color.
Blend it to a coarse paste. Add wheat flour, salt and any spice mix of your choice and 
Add water based on the consistency. 
Make a soft dough  and let it rest for some time.


 Roll it to a thin roti .



Put it on hot skillet. Once you see the small boils turn it and apply oil. and cook on both sides until golden.  Do not keep pressing hard.



Serve it with yogurt, any curry or Hot Tea
