Diwali is all about overcoming fear!
Diwali holds very special place in our hearts and no Diwali is complete without the galore of sweets.
Every year I ask / challenge myself to make something I have never did before in my offering known a Annakot.
Karachi Halwa has been on my mind for several years. I have fond memories with it from my childhood. No trip to souther India was complete without this.
Finally here it is !
No so difficult at all just 4 main ingredients
Sorry I do not pictures for step by step as always, but please do read the instructions carefully!!
I will update with step more pictures for instructions pretty soon, but for now it's just the detailed instruction.
Ingredients
0.5 cups Corn flour
1 cup sugar
2.5 cups water
food color of your choice
Mix chopped nuts ( I have used Cashew and Almond)
About 4 tblsp of Ghee
Procedure
1: In a bowl mix corn flour only 1.5 cups of water , little food color and mix it well. Make sure there is no lumps.
Make sure to use the corn flour of very smooth variety.
In another pot heat sugar and remaining 1 cup of boil and bring it nice boil. We are not trying to make any thread consistency. Just let it boil until it comes to boiling point
At this point add the corn flour slurry and keep it stirring making sure there is no lumps. Slowly keep adding Ghee 1 tablespoon at a time.
Keep stirring continuously!!
Yes its gonna be hand workout. Very soon the corn flour will begin to thicken, keep stirring.
The Ghee ( clarified butter) is what give this sweet a transparent glossy texture.
Keep adding slowly, The ghee will continue to absorb as you stir in.
At one point it will stop absorbing.. for me it was after 4 tbsp.
At this point add the nuts, cardamom(elaichi) and pour the batter into a greased plate.
Let it set on counter for couple of hours . Cut into pieces of your desired size. This sweet has really long shelf life.
