Roasted Pepper Hummus

Hummus is again a middle east origin and made from garbanzo beans. Its loaded with. lot of goodness. I have made this hummus little more flavorful.. checkout how :)
This spread has been an hit with my kids , they love to eat with their chips or crackers for evening snack! Make it and it remains fresh for over a week when refrigerated!



1: Soak the garbanzo beans over night for at least 8 hours. 

Now pressure cook it till tender, I used my instant pot for cooking on high or 20 mins


Take some bell pepper and roast it on frame or skillet. I preferred to just use my electric grill to do it.


Now mix the sesame seeds bell pepper and boiled beans in a blender , add olive oil, little water , squeeze lemon generously to a very smooth paste.

Add very little water. Use olive oil and lemon . The less water you use, the more is the shelf life.



We made a wrap for dinner with the hummus and falafel with some veggies :)
